Are you the type of person who wakes up fresh and ready to conquer the day every single morning?

I’m not.

There’s not much about the morning I like, to be honest.

But you know what I do love about mornings? Breakfast food.

I like to start my day with a delicious and hearty breakfast that fills me with energy and makes me happy. Yes, breakfast makes me happy. Actually, food makes me happy and breakfast food has a very special place in my heart.

I know it’s tempting to skip breakfast during busy mornings, but it’s not at all recommended. Yet, we all do it sometimes because our mornings are too hectic to have time to prepare breakfast. And, since school is back in session, my mornings got a lot busier so I really don’t have a lot of time to prep a healthy and filling breakfast.  Plus: I’d rather be sleeping every last second I can.

I don’t know about you, but if I skip breakfast, I am hungry, groggy, and tempted to eat ANYTHING just to make myself feel better.

Fortunately, I’ve discovered make ahead frozen breakfast burritos that are the perfect solution to my dilemma.

THE BENEFITS OF MAKE-AHEAD BREAKFAST

Still on the fence about make ahead breakfast? Well, let me tell you some other benefits of make-ahead breakfasts.

Even though I kinda touched on this subject already, I have to note that making breakfast ahead of time saves you a LOT of time. Waking up and prepping breakfast is not for me. Plus, I prefer to have some ramp up time in the morning instead of spending 20 minutes in the kitchen. So make-ahead breakfasts were a total game-changer for me.

If you prep your breakfast ahead of time, you won’t be tempted to leave the house without eating breakfast, only to eat something unhealthy on your way to your job. If you’re busy, planning will keep you healthy. And prepping a make-ahead breakfast that matches your dietary needs is the best way to make sure your meals are always nutritious, clean, and, of course, healthy.

Not to mention your mornings will be tasty and stress-free.

Research also indicates that those people who skip breakfast spend the rest of their day easting extra food, more so than they would have for breakfast, to make up for that lost energy.  In other words: eating a healthy, well-balanced breakfast helps you maintain a healthy weight and may even help you to lose weight!

WHY FROZEN BREAKFAST BURRITOS ARE GOOD FOR YOU

Now that you know why make-ahead breakfasts are the solution for busy mornings, I have to tell you why this healthy breakfast burrito is so special.

Each breakfast burrito contains 13 grams protein and 5 grams of fiber. And only 350 calories.

Amazing!

And what makes this breakfast burrito even better is the fact it includes all the foods that you’re supposed to eat for breakfast.

Typically, a nutritious, well-balanced breakfast includes a variety of components, such as:

milk or dairy products eggs lean meats whole grains veggies and/or fruits

The make-ahead breakfast burritos are made with…

Why is it that a healthy egg breakfast is so good for you?

Because eggs are loaded with good fats, vitamins, and, of course, protein. Lots of high-quality protein and complex carbs to get you going for the day.

So the answer to “Are scrambled eggs good for you?” is most definitely a YES.

And, don’t worry, using bacon is not cheating because this frozen breakfast burrito recipe uses nitrite-free, sugar-free bacon, cooked and crumbled and delicious.

Wait, what is nitrite free bacon?

It’s unprocessed bacon, that’s what it is (and by that I mean uncured and no sugar added bacon).  Make sure to look at the ingredients and labels when youpick out your bacon.  (P.S. You could also sub for any meat of your choice here, but I love me some bacon in my burritos!)

The veggies in this easy breakfast burrito recipe are roasted, not pan-fried, which means the recipe cuts down on oil, too.

But what about the carbs from the tortillas?

First of all, carbs are not bad if you eat them right. Poor carbs get such a bad wrap! And the best time to eat carbs is during the morning because they will give you energy for the entire day. Eating carbs for breakfast means you get the chance to burn them during the morning and rest of the day.

Second of all, not all grains are bad grains, assuming you have no dietary restrictions, of course. Whole grains are actually good for you. They are high in fiber and nutrients, including vitamins, minerals, and proteins.

So you have all the nutrients you need for a healthy breakfast in these healthy breakfast wraps.

HOW TO SCRAMBLE EGSS ON THE STOVE

Have your scrambled eggs turned out pretty bland, dry, and unappetizing before?

Yeah, that happens sometimes.

But it doesn’t have to anymore!

To be honest, I learned how to make the best scrambled eggs on the stove by Dustin.  His scrambled eggs rock!  So here’s what you have to do if you want perfect scrambled eggs:

Heat a large skillet over medium-high heat. Add a little bit of olive oil. Add the egg mixture to the skillet to cook. Move the eggs around constantly using a rubber spatula until the eggs are mostly set, but are still slightly moist! This is another important step. Don’t skip it because you will end up with unappetizing scrambled eggs. And no one wants that. 4-6 minutes of cooking and stirring is enough. After that, remove the skillet from the heat.

And remember, eggs continue to cook after you remove them from the heat so cooking them to perfection over the heat will mean overcooked eggs once you’re finished!

How to a fold burrito step by step.

HOW TO FOLD A BURRITO

This is the most common question I receive when I talk about burritos. It’s also a big reason people avoid homemade burritos. No good!  This must be fixed!  Because homemade burritos are the best!

And learning how to fold a burrito is actually very easy. The main secret is to not fill them excessively. That’s it.

Here’s how you fold a burrito:

Add all the ingredients on the tortilla in a line in the center. Fold the sides of the tortilla inward over the filling. Roll from the bottom up to form the burrito. Continue to fold and then let rest on the seam to hold it closed. Wrap the burrito in aluminum foil.  Repeat until you finish all the ingredients.

See? It’s easy peasy. Nothing to be scared of.

FREEZING YOUR BREAKFAST BURRITOS

Since this is a make ahead breakfast, I assume you want long-term storage.

Let’s talk about how to freeze breakfast burritos then.

Place the burritos into a freezer safe bag or storage container. Put the bag or the container in the freezer.

And you’re done.  Period.

The burritos will be safe in your fridge for up to 3 months.

And now you can think about how much time you saved by prepping this healthy frozen breakfast. And you can congratulate yourself.

Go ahead. You deserve it.

HOW TO HEAT UP YOUR BURRITOS

So we have our frozen breakfast burritos, it’s morning time, and we’re hungry….what do we do?

Fair question.

Friend, I have 2 options for you for how to reheat your breakfast burritos:

Option 1 – Remove the burritos from the freezer, unwrap them from the foil, and microwave on high for 1 to 2 minutes, until they are warmed through. Option 2 – Heat them up in the oven at 350°F for 12 to 15 minutes, until heated through.

Both options will make your burrito taste delicious, warm, gooey, and all yummy again.  Personally, I microwave them because it’s the fastest and easiest, but either option will work perfectly well.

This whole make-ahead breakfast sounds good. But you cannot eat burritos every morning.  Nope, you can’t, but you can try other make-ahead recipes. Of course, I have some recommendations for you.

Looking for a healthy make ahead breakfast? I’ve got you covered with these healthy frozen breakfast burritos! Because it is important to start the day right, these frozen breakfast burritos are packed full of fiber, protein, and energy for the day.

For the Roasted Veggies: 3 red potatoes, (diced) 1 red bell pepper, (diced) 1 green bell pepper, (diced) 1 red onion, (diced) 1 tbsp olive oil 1 tsp sea salt 1/2 tsp pepper 1/2 tsp garlic powder For the Scrambled Eggs: 10 large eggs 1/2 cup cheddar cheese, (shredded) 1/2 tsp sea salt 1/4 tsp pepper 1/8 tsp garlic powder 1 tsp olive oil For the Burritos: 12 8-10 inch whole wheat tortillas ((or any wrap of your choice)) 12 slices nitrite-free, sugar-free bacon salsa, greek yogurt ((optional toppings))

Start by preheating your oven to 400 F and lining a rimmed baking sheet with parchment paper.   

On the baking sheet, we’re going to combine diced red potatoes, a diced red bell pepper, diced green bell pepper, diced onion, olive oil, sea salt, ground black pepper, and garlic powder. Then, toss to coat everything evenly. 

Spread the veggies out into an even layer on the baking sheet and roast in the oven until the potatoes are tender, about 20-25 minutes. This will become our roasted veggies hash for our burritos. You can add in or remove any veggie you don’t like here as well.

While the vegetables are roasting in the oven, we’re going to get our eggs ready. So, in a large bowl, combine our eggs, shredded cheddar cheese, sea salt, ground black pepper, and garlic powder, and whisk together until smooth and fully mixed.

Heat a large skillet over medium heat.  When it’s hot, add a little olive oil followed by our egg mixture, and cook, stirring constantly with a spatula, until the eggs are mostly set but still a little moist, about 4-6 minutes. 

Then, remove from the heat. The eggs will continue to cook once you remove them from the heat so don’t wait until they look completely cooked over the heat or you’ll risk overcooking them.

Now that we’ve prepped our veggies, eggs, and bacon, let everything cool some before assembling out burritos. Otherwise, the burritos might become soggy from the steam and they won’t freeze well.

To make our breakfast burritos, tear off 12 squares of aluminum foil, and have all the filings ready in stations.

Place a whole wheat tortilla on top of a piece of foil. Make sure the first ingredient says whole wheat before you buy it. You could also use a homemade tortilla or a healthy wrap.  

Top the tortilla with approx. 1/4 cup of the roasted vegetables, followed by 2-3 tablespoons of our cheesy scrambled eggs, and then top with a dusting of our bacon crumbles.  If you wanted to add any other toppings, like some salsa, right here would be the time.

Fold the sides of the tortilla inward over the filling, then roll from the bottom up to form the burrito.  

Wrap the burrito tightly in the aluminum foil and then repeat with the remaining ingredients. 

Place the burritos into a freezer safe bag or storage container, and then place into the freezer for long term storage.

These frozen breakfast burritos will last in the freezer for up to 3 months, making it an awesome make ahead breakfast option.  When you’re ready to eat, just remove from the freezer, unwrap the burrito from the foil, and microwave on high for 1 to 2 minutes, until it’s warmed through, or you could heat them up in the oven at 350°F for about 12 to 15 minutes.
